Blood red

These were the centrepiece of the dinner my aunt cooked. Clams, eaten as sashimi, dipped with a thick vinaigrette sauce. My uncle shelled these, cleaned them, and told me to start stuffing my face. Good man. These bleed bright red - a little unsettling, but the texture was extraordinary and flavour, perfect.

    We didnt eat ours quite as raw. the preparation was get a pot of piping hot water and dump these in and get them out right away.
    shell fish here in Canada just doesn't cut it..

  2. With the exception of oysters........yeah, China ruined eating shellfish here for me.
